Spicy Seafood Couscous 

Ingredients:

  • 3 small bay leaves
  • 1 14 1/2-ounce can diced tomatoes in juice
  • 1 carrot, thinly sliced
  • 1 celery stalk, thinly sliced
  • 1/3 cup hot chili paste (such as sambal oelek*)
  • 3 8-ounce bottles clam juice
  • 3 1/2 cups plain couscous (20 ounces)
  • 1 cup dry white wine
  • 2 pounds assorted fish fillets (such as halibut, cod and red snapper), cut into 1 1/2-inch pieces
  • Chopped fresh parsley
  • 1 1/2 teaspoons chopped fresh thyme
  • 4 large garlic cloves, chopped
  • 12 littleneck clams, scrubbed
  • 1 1/2 pounds mussels, scrubbed
  • 3 tablespoons plus 1/4 cup olive oil
  • 1 large onion, chopped
  • 8 ounces uncooked shrimp, peeled, deveined
